  • 1 tbsp ground flax seed
  • 3 tbsp water
  • 3/4 cup grated carrot
  • 3/4 cup grated apple
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup oat flour
  • 1/4 cup low-fat almond flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp nutmeg
  • 4 to 6 scoops Amla Green Pumpkin Spice
  • 1 tbsp maple syrup (optional)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F and line a baking sheet with parchment.
  2. Soak the pitted dates in hot water to soften.
  3. In a small bowl, whisk together the ground flax seed and water.
  4. Set aside to thicken.
  5. In a mixing bowl, combine the shredded carrot, apple, coconut, oat flour, low-fat almond flour, cinnamon, ginger, nutmeg, and Amla Green Pumpkin Spice. Stir well.
  6. Drain the softened dates. Transfer them to a small blender or food processor, add the maple syrup (if using) and vanilla extract, and blend until smooth. Transfer the date mixture to the mixing bowl.
