My background in nutrition
When I was in college at Stanford, I was diagnosed with type 1 diabetes. To say I was crushed is an understatement. I felt like my life was ending.
The next 1 year trying to manage my disease just made things worse. I took the usual advice given to diabetics - eat a very low carbohydrate diet. I felt mentally and physically slow, and I was still taking a high amount of insulin.
That all changed when I adopted a low fat, plant based diet. This was a HUGE change for me - I grew up making fun of people who did not eat meat! It was the best decision I’ve ever made.
Within a few days, I got my mental and physical energy back for the first time in a year. Moreover, within 3 weeks, I cut my insulin usage down by 43%!!
But how is this possible?? I was eating MORE carbs and taking LESS insulin?
I spent the next 5 years learning how this worked.
I earned my PhD in Nutritional Biochemistry at the University of California Berkeley. I read +3000 scientific papers on diabetes, and wrote and defended my thesis on insulin resistance.
