Ingredients:
- 1/2 cup pitted Medjool dates, soaked in hot water to soften
- 1/2 cup chopped strawberries (fresh or frozen)
- 1 tbsp almond butter
- 1 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1/4 cup raw cacao powder, plus more for dusting
- 1/4 cup almond flour (preferably defatted almond flour)
- 2 scoops Amla Green Immunity with Elderberry or Amla Green Hibiscus
Directions:
- Drain the dates and add them to a food processor or blender along with the strawberries, almond butter, maple syrup, and vanilla. Process until smooth.
- Transfer to a mixing bowl. Add the cacao powder, almond flour and Amla Green. Stir until there are no dry streaks remaining.
- Sprinkle cacao powder on a plate. Drop the batter in 1-Tbsp balls onto the plate. Roll the ball around to coat it in cacao powder. Roll it into a sphere between your hands, then place it on a parchment-lined plate or tray that will fit in your freezer. Continue until all the batter is used. There should be about 16 truffles.
- Freeze the truffles for several hours or overnight. Remove them from the freezer about a half hour before serving.
